Reply with quote | #1 | Right now I have peaches in the steamer. I want to can the juice and save to make jelly/jam this fall. My question is: Once I pour the hot juice into the canning jars and seal, do I still need to process in a water bath canner? __________________ Georgia Gal |

Reply with quote | #2 | The official word (via Cooperative extension service) is yes. Then you will be absolutely sure of no contaminations. I cannot offer any other advice about this topic officially as the extension services are the best reference for canning issues of sterility.
Now, with that said, I have never water bathed after drawing the juice off. I keep all my tools very clean as well as the counters and stove top. Then I boil my lids and bands for at least 15 minutes and keep my jars in 250 degree oven for at least 20 minutes before filling. I have never had a problem unless a seal goes bad in which case water bathing wouldn't have made a difference.
Let me know if that helps. Daniel
