I learned a trick from my brother a few years ago while using his steamer / juicer. Now that I have bought one for myself I use his method of making sure water is always in the water pan.

Place several small glass marbles in the pan, then add water and start the heating process. The marbles will bounce / rattle while there is water in the pan. When the water gets low the marbles will cease to bounce / rattle and the water level should be checked. Pouring cold water in a hot pan causes problems - the marbles will crack as well as lots of stress on the pan.

This is an old trick I learned as well from my father way back when. It really does work.

Customers often call to report a burned waterpan after they got caught up doing something else while the juicer was perking. If you must multi-task, try to stay in the kitchen while you do so.

I also suggest getting a digital timer (around $11-15) that has an alarm on it so it can remind you that the juicer is on the boil. I use two CDN large display timers in my kitchen. I set one to 30 mins. when I put the full fruit basket in place. The water will have already come to a boil. When it goes off, I check the water pan and add water if necessary (use oven mitts or work gloves to avoid steam burns). Then, I set it to 15 mins. to announce the end of processing (these numbers can be adjusted to fit the processing time for different fruits but keep the 30 min. period constant).
