I "juiced" the harvest of blackcurrants from the garden ,  I let them steam until all the fruits were mushy, not sure how long, but the juice was fabulous
the pulp I threw away, I suppose I could have added a little water to it and made a sort of jam, but didn't want all those pips.....
  I added sugar to taste to some of the juice and brought it to the boil just to dissolve the sugar, makes a lovely drink.
The rest of the juice I made into jelly  it gave me 15 1/2 pound, some has already been given away. Our nest harvest will be Elderberries but they have a way to go yet.  It appears that blackcurrants are the new super fruits.

Yes, Black Currents are returning to their rightful place on our tables and in our diets. They had been suppressed by timber bans due to their effect on White Pines and vice versa. I believe these bans have been relaxed.

They have a wonderful old-word flavor that I love. I remember them in the gardens of the farms in the area I grew up, around Ithaca NY. They were usually joined by gooseberries, both green and purple, red currents and quince. All wonderful old time fruits with lots of potential for canning.

Try a summer spritzer with Black Current juice and either soda or mineral water 1:1 ratio or even more dilute as the juice can be quite concentrated. Adding sugar during processing can give a sweeter juice according to taste.

Thanks,,,, WE dilute the black currant juice with tonic water, though I
don't like tonic water the blackcurrant does make it palatable, tonic water
is very good for night cramps.
Gooseberries , no, don't grow them or red currants, but we do have a quince
tree in the garden, looks good so far this year......

 PS, Am I suppose to copy the letters at the bottom when I send a reply??
