I have been getting some questions about the necessity for water bathing juice from the Mehu-Liisa. The official word is: Yes, you should water bath the jars of juice to be absolutely sure there is no chance of spoilage. Follow instructions in Cooperative Extension literature on processing juice.

Now, I personally do not water bath the juice. I draw off the juice into sterile bottles and use sterile lids. I wash the jars and put them in a 250 degree oven for 20 minutes. I wash lids and boil them for 15 minutes. I feel this is safe enough for me. HOWEVER, to be absolutely sure you MUST water bath your juice.

I ALWAYS water bath any sauce, jam or jelly I make from the juice or the pulp leftover after processing. There is enough chance to introduce pathogens in the further processing involved to necessitate water bathing.

Always consult your Cooperative Extension guides for proper canning safety and procedures. They are very helpful and usually up to date.
